Jody’s Favourite Recipe
Jody, one of Arrow’s Teen customers sent us this recipe to share with you all. It is her favourite and we here at Arrow Sports made it and brought it into the office to share – and guess what we love it too!
Easy to pack in your lunch – warm up or have it cold with your favourite spread!
Jody’s Corn, Fetta and Zucchini Crammed Muffins
Preheat oven to 200 degrees C/180 degrees fanforced. Grease a 12 hole muffin pan.
2 Cups Self-raising flour 3 Green onions
80g melted butter 125g crumbled feta
1 Cup Buttermilk 300 g frozen or canned corn kernels
1 egg 1 coarsely grated zucchini
Sift self-raising flour into a large bowl , stir gently in the combined butter and buttermilk and egg. Add 3 finely chopped green onions and the crumbled feta together with the corn kernels and coarsely grated zucchini. Fold gently to combine (don’t over mix or muffins may be a bit tough). Spoon muffin mixture into pan holes and bake for 25 minutes or until a skewer comes up clean. Leave in pan for 4-5 minutes to cool slightly – Turn on to wire rack to cool.
Serve warm with butter, or cut open and toast on sandwich press (my favourite!). Or take to have cold on a picnic or in your lunch box. Anyway you have them they are YUM!
